Butternut Squash!! Easy recipe for a great filling, nutritious "Butternut Squash Soup"
Butternut squash are so underrated, and are important to incorporate in a healthy diet. They are part of the curcubita family of fruits and are referred to sometimes as butternut pumpkin or gramma They are rich in essential nutrient, rich in anti-oxidants, rich in Vit A ; almost all our daily requirement can come from 1 serving, rich in manganese, vit C, magnesium and potassium.
They help boost the immune system and reduce inflammation and more so they are delicious...
Here is an easy to do Butternut squash soup recipe:
1/2 Tbsp coconut coil
1 cloves garlic, minced
3 cups butternut squash diced
1 shallots, thinly diced
1/2 tsp salt + 1/2 tsp black pepper +1/4 tsp paprika
1 Tbsp curry powder
1/8 tsp ground cinnamon
1/2 can light coconut milk
1 cup vegetable broth
1 tsp maple syrup
Place a medium pot over medium heat, add the coconut oil, shallots and garlic and sautee for few minutes while stirring. Then add the butternut squash and season with salt, pepper, curry powder, cinnamon and cayenne pepper, until the butternuts are coated. Let it cook for another 5 minutes. Add the coconut milk, the vegetable broth, maple syrup. Reduce the heat to low and cover the pot and let it simmer for 20 minutes. Check if the butternut are tender take the pot off the stove and let it cool for few minutes. The put the mixture in the blender and puree it until creamy. Add more seasoning if needed and serve with a few leaves of cilantro.
